Preheat oven to 400 degrees F. Pierce sweet potatoes with fork; place on baking sheet. Bake 50 minutes or until tender. Reduce oven temperature to 350 degrees F. Cut lengthwise, slice off top of each potato. Scoop out centers, leaving 1/8 inch thick shell. In medium bowl, mash potato pulp. Add milk, butter and sugar; beat until fluffy. Spoon into shells. Place shells in large shallow baking pan. Bake at 350 degrees F for 10 minutes or until heated through.

I keep mine simple. They are quartered and rubbed with olive oil and black pepper. I try to have them done on the bbq but in cool weather, I'll slice them thick, coat in olive oil again and bake on a cookie sheet for ten minutes at 400*.
