Prepare potatoes using package directions. Add remaining ingredients; mix well. Drop by tablespoonfuls, several at a time, into deep fat at 365 degrees F. Fry for about 1-1 1/2 minutes, until golden brown, turning to brown sides. Drain on paper towels.

Sounds good. Thanks Robin. Does it matter if it is the pancake mix that one just adds water to or does it need to be the one where you have to add oil and egg?

If you use real butter and evaporated milk when making instant mashed potatoes you will find they are going to taste more like fresh.
