I never dry my noodles. After rolling the dough out, I immediate cut them. Then I cook them at once. My husband suggested that I use a pizza cutter. My noodles are more uniform and cutting is so much easier and faster.

A good idea but noodle cutters are back on the market. I bought one in the kitchen ware dept of a department store but kitchen stores will carry them too I am sure. They will cut a row of ten noodles in one cut. They work like a pizza cutter only they have ten blades.
