In a large bowl, combine the first nine ingredients. In another bowl, beat the eggs, buttermilk, applesauce and oil until blended. Stir into dry ingredients just until moistened. Fold in the apple, carrots, raisins, and pecans.
Coat muffin cups with nonstick cooking spray or use paper liners; fill 2/3 full with batter.
Bake at 400 degrees F for 10-15 minutes or until a toothpick comes out clean. Cool 5 minutes before removing from pans to wire racks.

Just want to say "Thank you" for all of your tasty (and healthy) recipes. Many recipes are sent to Thrifty Fun and they mostly sound very good but also many of them are calorie and fat loaded.
I am looking forward to making these as they looking good and healthy. I would love to more recipes of this nature. Low fat, low sodium and not to sweet. Thanks Merlene
