Organic eggs might cost you up to 3 times as much as regular eggs, but the difference in the taste you'll notice.

Editor's Note: If there is somewhere locally you can buy fresh farm eggs, they are a lot better, too.

There is just no comparison between store-bought eggs from caged hens, and the eggs you get straight from a farmer who allows his hens to range freely.
I don't know that the nutritional content is that much different (if any), but I can sure tell you that the egg tastes about 99% better, and the yolks are so golden and pretty. We only have one little laying hen, but she's a pet, and hasn't missed laying an egg a day now for 37 consecutive days. Before this, she'd layed an average of 29 eggs every 31 days. I know she is young, because she layed her first egg just last Nov., and is getting closer to being mature. That could account for the increase in number of eggs. We don't know, but we do know that she alone keeps us in all the eggs we use. A fresh egg is a treasure, and almost unheard of when buying eggs at your local supermarket. If you ever get a fresh totally organic egg, you will be spoiled for life.
It's a wonderful way to be spoiled though, so go ahead and give yourself a treat.
All the best to everyone,
Julia
As an added bonus, the more demand from the consumers who do purchase organic foods, the more farmers will develop organic methods, which in turn will result in lower prices. Every customer helps!
