I like to freeze tomatoes and it's very easy. Just wash and core them and then set on a cookie sheet and slide in the freezer. When frozen, move to ziploc bags (sounds like billiard balls when then hit together!) and store in freezer. When ready to use, let thaw slightly and they will slip right out of their skins!
