Saute first 3 ingredients in oil in saucepan until tender. Add undrained beans and chicken broth. Stir in remaining ingredients. Bring to a boil; reduce heat. Simmer until heated through, stirring occasionally.

In blender, mix 2 16 oz. drained cans of white beans, 2 cups chicken broth, 1 cup marinara sauce, 1/2 Tbsp. each of parsley and garlic. Sprinkle a dash of salt in and puree.
Simmer in pot over medium heat 4-5 minutes. Just enough time to heat up the oven for some specialty bread!
This soup is so easy to make and very good. You can add a dollop of sour cream or cream cheese on top after you serve it, or sprinkle some shredded cheese.
A perfect thing to have when everyone is cold, and tired, plus the ingredients are easy to buy and store.
