Warm and hearty coupled with quick and tasty for a comforting summer dinner.
Mix oats, black pepper, salt, garlic powder, tomato sauce, and egg. Add onion, bell pepper, sliced grape tomatoes, and fresh mushrooms. Add the lean ground beef. Using a fork, blend all ingredients, making sure the lean hamburger or ground turkey is fully mixed with the wet ingredients. All of the meat will change color slightly and look wet and slippery when it is mixed well.
Preheat a large black cast iron skillet sprayed with nonstick spray over medium high heat.
Shape meatloaf mixture into hamburger size patties. Gently place into the hot skillet. Brown patties. Turn carefully after about 7-8 minutes. Gentle turning is necessary to keep the meat patties from falling apart as the moisture in the mixture makes it crumble easily. After turning, sprinkle with some olive oil to keep lean meat from sticking or scorching. Cover and reduce heat to medium; cook for another 7-10 minutes.
Serve with homemade mashed potatoes, some cut corn, sliced summer tomatoes, and brown gravy. Even your grandma would love this meal!
