Hard boil and peel two eggs. Separate white and yolk. Make a white sauce by, melting butter in a sauce pan. Add flour, stir till pasty. Add milk, salt, pepper, and chopped up egg white. Simmer. Pour over toast or biscuits. Crush yolk and sprinkle on top.

This is one of the first things I learned to cook in Home Ec. when I was in high school. It is so good. It's good with shredded cheese sprinkled on top too. I haven't made it in years, maybe for breakfast Sunday morning! yum-yum
