Mix egg yolks, water and oil. Stir in flour. Add more flour if needed and knead so it is not sticky. Take baseball-size pieces of dough; flatten and flour them. Put through noodle maker 2 or 3 times. Dry. Cut into noodles and dry some more.

This was basically my mom's recipe too. She never used the egg white which is probably not the healthiest, but I have to say they were the best homemade noodles I ever had, too!
