Peel and slice enough apples to fill a heavy six quart pan. Cook rapidly, stirring frequently, until apples are soft; then cook slowly, stirring constantly. When the mixture begins to thicken, add spices and sugar. Cook, stirring constantly, until the mixture is very smooth and thicken enough to spread. Stir in lemon juice. Pour immediately into hot sterilized jars and seal at once. Makes about 5 pints.

What apple is best to make apple butter?

I use Jonagolds or any type sweet apple therefore I don't have to use but a little sugar. I only used 1 cup of sugar to 16 cups of sauce and it was plenty sweet. My recipe is:
Put ingredients in a roaster and bake at 350 degrees F until thick stirring every half hour. Put in sterilized pint jars and process by water bath. Makes 5-6 pints. When I give this for gifts everyone raves at the flavor. (10/21/2009)
