Scones can be served at breakfast or a tea time treat.
Preheat oven to 390 degrees F. (200 degrees C.) Sift dry ingredients. Add sugar and rub in butter until mixture resembles breadcrumbs. Add raisins.
In a separate bowl whisk the yolk and milk. Make a well in the center of the flour mixture and pour the liquid. Mix to form a soft dough.
Turn dough onto a floured surface and press out to 2 cm thickness. Cut with a scone cutter. Place scones on a greased baking tray.
Beat the egg white and brush over the top of the scones. Sprinkle with castor sugar.
Bake in a preheated oven for 15-20 minutes or until golden brown. Serve with butter and jam with a hot cup of tea.
