Caribbean Lime Coolers

I got this recipe from Betty Crocker.com. It's lime but you'd never know the difference. Very easy recipe!

Ingredients:

  • 1 pouch (1lb. 1.50z.) Betty Crocker sugar cookie mix

  • 1/2 cup coconut
  • 1 Tbsp. grated lime peel (about 1 lime)
  • 3 Tbsp. lime juice
  • 6 Tbsp. butter or margarine, melted
  • 1 egg
  • 1/4 cup powdered sugar

Directions:

Heat oven to 350 degrees F. In large bowl, stir cookie mix, coconut, lime peel, lime juice, butter and egg until soft dough forms. Drop dough by level tablespoons, 2 inches apart onto ungreased cookie sheets. Bake 9-13 minutes or until edges are light golden brown. Cool 1 min. Remove from cookie sheet. Cool completely, about 15 minutes. With small strainer, sift powdered sugar over cooled cookies. Store covered at room temperature.

This Caribbean Lime Cooler recipe is a close match to the old Lemon Cooler cookies by Nabisco. And as I said, this recipe is lime but you'd never know, it tastes lemony.
