I make smooth gravy without grease /oil, brown flour in skillet, about 1/2 cup or less. Remove from heat. Add water & tomatoes or what you want. Stir with whisk or fork till smooth, add as much water as you like. If lumps in gravy, strain it. The Greek spice recipe is below. Add as much as you like to gravy, simmer 5 min, good luck.

Greek spice recipe:
12 Servings
Prep/Total Time: 5 min.Ingredients
1-1/2 teaspoons dried oregano
1 teaspoon dried mint
1 teaspoon dried thyme
1/2 teaspoon dried basil
