B Is For Banana Bread

Ingredients

  • 3/4 cup sugar
  • 1 1/2 cups mashed bananas
  • 3/4 cup oil
  • 2 eggs
  • 2 cups flour
  • 1/2 cup chopped nuts (optional)
  • 1 tsp. baking soda
  • 2 tsp. vanilla
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt

Directions

Heat oven to 325 degrees F.

Grease loaf pan with shortening or cooking spray.

Mix sugar, bananas, oil and eggs in a large mixing bowl. Stir in remaining ingredients. Pour into pan.

Bake at 325 degrees F until toothpick inserted into center comes out clean.

About 60-70 minutes let cool. Loosen sides of loaf from pan and remove from pan.

Allow to cool completely before slicing.

Thank you for this recipe. I think one of my kids took the book with them. The recipe was simple and actually won a blue ribbon at the county fair one year.

lost my book from the 80's. love this recipe. our go to banana bread for 30 years.

I love this recipe! Have used it for decades!

My twist is, I bake it in a sprayed 8 x 8 or 9 x 9 square pan. It lets the better spread out and, not being as dense, it bakes faster and lighter.
