Apple Fritters

This delicious deep fried treat is great for an appetizer, snack, or a fun side dish. It reminds me of fall festivals and county fairs.

Ingredients:

  • 2-3 medium sized apples, peeled and chopped
  • 1 cup sifted flour
  • 1 1/2 tsp. baking powder
  • 3 Tbsp. confectioner sugar
  • 1/4 tsp. salt
  • 1/3 cup milk
  • 1 egg, well beaten
  • deep fryer and oil
  • sugar (for garnish)

Directions:

Preheat deep fryer. Mix all ingredients together in a big bowl.

Drop spoonfuls into deep fryer (365 degrees F). Fry for 3-4 minutes or until golden brown (turn during frying if necessary). Move fritters to a paper towel to drain off excess oil.

Sprinkle with sugar when serving.

Ingredients

  • 2 1/2 cups all purpose flour
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 1/2 cup non-fat dry milk
  • 1/3 cup sugar
  • 2 eggs
  • 4 cups water

  • 2 cups apples (chopped and pared)
  • Cooking oil
  • Sugar

Directions

In a mixing bowl, combine first 5 ingredients. Lightly beat eggs with water; add to dry ingredients and stir just until moistened. Fold in apples. In a skillet, heat oil to 375 degrees. Drop batter by teaspoonsful into oil and fry until golden brown. Drain on paper towels. Roll in sugar. Serve warm.

Yield: 40 fritters

  • Confectioners' sugar
  • vegetable oil

Directions

Combine dry ingredients in medium size mixing bowl. Combine milk and egg. Stir into dry ingredients. Stir in apples. Drop batter by teaspoonfuls into deep hot oil. Fry until brown, turning once. Drain on absorbent paper, sprinkle with confectioners' sugar.
