Lots of different yeast roll recipes to choose from.
I have found the easiest way to make any kind of yeast bread is to use your bread machine and put in ingredients according to the order it says in instructions. For instance, mine says that I put in all liquid ingredients first. Then set it on 'DOUGH" cycle. That does half your work. Then you just need to shape the rolls and let rise again and bake.
Mother's Rolls
2 pkgs. dry yeast
2 c. lukewarm water
3/4 c. sugar
1 t. salt
6-7 c. flour
3 T. cooking oil
2 eggs
Dissolve yeast in water. Add sugar and salt; stir well. Mix in 2 cups flour. Add cooking oil and mix. Add 2 more cups flour and eggs. Mix well and beat 100 strokes. Mix in 2 more cups flour. Add up to 1 cup more flour to make dough right consistency.
Mom's sweet buttery rolls
1- cup milk warmed
1/2 cup butter softened
2-eggs room temp
1-tsp salt
4- cups bread flour
3-tsp yeast
2- 1/2 - cup sugar
Place all ingredie4nts in bread pan as listed.
Select Dough cycle and start. When finished turn out on lightly floured board and knead a few times, cover with wax paper or plastic wrap. Let sit for 10 minutes. Pinch off and form rolls on a buttered pan allow to rise in a warm place for at least 20 minutes. Bake at 375 degrees for 20 to 22 minutes
I would guess you could do the same thing using a stand mixer as well.
