Baking Goodies With Cake Mixes
Peanut Butter and Chocolate Chip Bars
If you like peanut butter you will love these crunchy bars.
Ingredients:
Directions:
Mix together cake mix, eggs and oil.
Then mix in the peanut butter.
Then stir in the chocolate chips.
Pour mixture into a 9x13 inch baking dish. Pat until flat.
Bake in a preheated oven at 350F 14 to 17 minutes.

This is a delicious recipe using a yellow butter cake mix and several other ingredients easy to keep on hand. I got it out of our church cookbook that was printed in 1987, and I have used it more times than I can count. It is always a hit and so easy to "make and take."
Neiman Marcus Cake
Mix with fork or pastry cutter and press into rectangular cake pan sprayed with cooking spray. It is much easier to press this mixture down if you use a piece of plastic wrap to keep mixture from sticking to your fingers.
Beat cream cheese, sugar and eggs, then add the coconut and nuts--mix and pour over pressed down cake mixture. Bake at 350 for 30 to 35 minutes until golden brown. Cool, and cut into bars. Make them on the small side as these are very sweet and rich. So good!

Bottom Layer Ingredients:
Middle Layer Ingredients:
Top Layer:
Directions:
Mix Bottom Layer ingredients and pour the mixture into a 9x13 inch greased or baking dish. (or spray with nonstick spray)
Mix the ingredients together for the Middle Layer.
Evenly sprinkle Middle Layer mix over the Bottom Layer and gently pat it with your hand.
Then sprinkle walnuts on top of the Middle Layer.
Then top with the melted butter. Try to spread the butter as evenly as possible.
Bake in a preheated oven at 350F for 45 to 55 minutes.

Directions:
Preheat oven to 350. For bottom layer, combine melted butter, cake mix, and half of the nuts. Press into bottom of 9x13 pan. For the next layer, blend cream cheese and brown sugar till smooth. Spread over bottom layer. Sprinkle with remaining nuts and bake 25 - 30 minutes or till cheese layer is set. Cool completely before cutting, and store in refrigerator.

Delicious Chocolate Cake Mix Brownies
Rich brownie recipe using a chocolate cake mix.
Ingredients:
Directions:
Mix the chocolate cake mix with 1 egg and butter.
Then stir in pecans or walnuts (optional).
Pour into a greased 9x13inch pan to make the bottom layer.
Then beat powdered sugar, cream cheese and two eggs together.
Spread this mixture on top of the bottom layer. Bake in a preheated oven at 350F for 40 to 50 minutes.

Snicker Doodle recipe using a yellow cake mix.
Ingredients:
Directions:
Mix sugar and and cinnamon and set it aside.
In another bowl mix together cake mix, oil, vanilla and eggs until you have a nice dough.
Roll the dough into 1 inch balls.
Then roll the balls in the cinnamon and sugar mix to coat them.
Bake in a preheated oven at 375F for 8 to 10 minutes or until golden brown.

Ingredients for the bottom layer.

Directions:
For the bottom layer: Mix cake mix, 1 egg and margarine. Spread mixture on a greased and floured 9x13 inch baking dish.
For the top layer: Mix powdered sugar, 2 eggs, softened cream cheese and vanilla until smooth. Then spread this mixture on the bottom layer.
Bake in a preheated oven at 350F for 30 to 35 minutes.

I was told by my daughter-in-law to take 2 spice cake mixes and add 1 large can of pumpkin. Mix together and make into cookies. Real good. I have added chocolate chips and nuts.I have used the spice cake mixes and added applesauce, and have used bananas.
Another Cake Mix Idea
Cake Mixes go on sale at least every three months, so you can buy them cheap to have on hand. If you think a brand is too dry add a little more oil or another egg. I notice the premium brands call for more egg or oil than the generics do on the directions!
Checkerboard cake without special pans.
One box white cake mix prepared
Put half the batter in a 9 inch round pan, well greased
Add some dry cocoa mix and a splash of vanilla to the remaining batter. Enough Cocoa to color, enough vanilla to make it taste right.
Bake both rounds.
Cool well, maybe even half freeze.
Trim both cakes so they are flat and leve
Cut a circle from both centers. Layer the cakes and ice. Looks really cool when you cut it.
