Making Homemade Spices?

I am making spices for gifts. Do I need to do anything special to the jar that I am storing it in if I am using Parmesan cheese? Will it be OK if I do not refrigerate the contents?

Since the spices will have cheese it's best to keep refrigerated.

If you're going to put spices in little jars to give away, I would put either the cheese or the spices in a little ziplock bag (you can get really tiny ones at Hobby Lobby) so that the flavors don't meld together. Make sure & put a little note on the jar telling the receiver the amounts to use & to keep it refrigerated.

This is for Australians out there. Does anyone know how to make the double smoke sprinkle used by Action supermarkets? It rocks!
