I had never heard of basket cheese so I did a little research. It is a mild fresh cheese from cow's milk that is traditionally formed inside a basket, giving it a basket pattern on the sides. It is originally from Italy and/or the Middle East. People say it is like a combination of ricotta and fresh mozzarella. There is also a dry version. Both are commonly served at Eastertime.
As for freezing, it will change the texture so I would probably not recommend it. If you are cooking with it, it might be ok but it will be more crumbly than creamy when thawed. I would probably recommend against freezing it, since it is such a specialty item.
