Salt and brown pork chops. Add 1 Tbsp. uncooked rice for each chop and 1 Tbsp. extra. Add 2 cups diced celery, tomato soup and water. Cook slowly for 1 hour.

Place rice in a greased casserole dish. Brown chops in a skillet and then arrange on top of the rice. Place a slice of onion, tomato, and green pepper on top of each chop. Pour consomme and water over this. Cover and bake 1 hour at 375 degrees F.

How would you go about doubling this recipe? We always need 3 cups of rice for one meal so 3/4 cups just isn't enough. Have 7 in the family (three are teenage boys)
