I love the combination of veggies in this recipe. Very good, sweet yet tangy marinade.
Ingredients:
- 1 can French-cut green beans, drained
- 1 can small peas, drained
- 1 can white corn, drained
- 1 cup diced green pepper
- 1 cup diced celery
- 1/4 cup diced onion
- 1 jar red pimento
Marinade:
- 1 tsp. salt
- 1/2 tsp. pepper
- 3/4 cup sugar
- 1/2 cup oil
- 3/4 cup vinegar
Directions:
Heat marinade ingredients slightly and let cool. Pour over vegetables and let marinate for 24 hours or more, stirring occasionally.
