I have a group that gives things to people in financial difficulties and we get quite a few donations of things in plastic bags with the ties tied in a hard knot. While trying to get one untied so the bag can be used again, I spotted a fork on the table. Just the thing to loosen the knot enough to untie it without having to cut it or mangle my fingernails.

Knitting needles also work, as do meat thermometers or anything that can pry through the center of the bag.
When I know I have to carry multiple bags, I close the first tie, close to the contents. Then, I leave a gap, then do a small double tie on top.
This gives me a loop for my fingers, and if the top tie gets too tight, I can simply snip that part off and not lose much.
