Substituting Skim for 2% Milk in a Recipe?

I have a recipe that calls for 2% milk. I only have skim milk. What do I do?

What kind of recipe and how much milk is needed? If you are making pancakes, the type of milk won't matter. If you are making rice pudding and need a quart of milk, the finished product will be looser with skim milk and the taste won't be full and rich.

Add 2% butter. Butterfat has been removed from skim.

I always use skim milk in everything. Granted, in a mac & cheese dish it is not quite as rich, but in baking I have never run across a problem with it. The mac & cheese recipe I use is my mom's from way long ago and it still turns out plenty creamy.

You can also add a bit of powdered creamer that is used for coffee, works great!
