To save money, buy a large roast beef. The first night have roast beef, the next night, make hot roast beef sandwiches and chop up the remaining roast beef. Mix the chopped roast beef with sauteed onions and peppers, 1 cup catsup, 2 Tbsp vinegar, 2 Tbsp brown sugar, and 1 tbsp mustard to make barbecue sandwiches. You could also make a pot of vegetable soup and add all remaining leftover beef. It is a time saver and cost effective when you cook like this. One nice size roast can make at least 3 or 4 meals. I do the same with ground beef. I brown it all at once, then we have a week of tacos, sloppy joes, speghitti, and stuffed bell peppers.
A few more ways to use that leftover beef is: add cubed up into spaghetti sauce and cook until very tender; slice thinly and heat in taco sauce until it shreds for tasty tacos; add cubes of beef to potatoes, carrots, celery, and onions and add ready made gravy for a tasty and easy stew (frozen veggies work for this also) If you like, you can add peas and carrots and potatoes and gravy and top with refrigerator type biscuits and make a pot pie out of it. There are so many ways to use left over roast beef without even feeling like it is left overs!
