Chocolate Chip Spice Crocodiles

Ingredients:

  • 2 sticks margarine (room temperature)
  • 1 1/3 cups packed brown sugar
  • 1 egg
  • 1 tsp. vanilla
  • 2 cups flour
  • 1 tsp. baking soda
  • 1 1/2 tsp. cinnamon
  • 1 1/2 tsp. ground ginger
  • 1/2 tsp. salt
  • 1 pkg. mini semi sweet chocolate chips
  • 1 cup nuts
  • 1 cup powdered sugar

Directions:

Cream margarine and sugar. Add egg, vanilla, flour, soda, cinnamon, ginger, salt. Mix slow until incorporated. Mix in nuts and chips. Pinch off small pieces of dough and shape into 1 inch balls. If sticky refrigerate. Place balls on cookie sheet covered with plastic wrap and refrigerate 2-3 hours or overnight. Preheat oven to 350 degrees. Place oven rack in upper third of oven.

Place sugar in bowl and roll balls in sugar until thickly coated. Place on lightly greased cookie sheet 2 inches apart. Bake 10-12 minutes until tops look puffed and barely set and cracked. Cookies will be very soft, but will firm up as they cool. Leave on cookie sheet until completely cool. Excellent, and worth the effort.
