There are so many extract flavors to choose from, even coffee extract, for these oh so easy mild flavored cookies. My favorites happen to be almond, cherry, maple or raspberry.
Preheat oven to 350 degrees F. Line two cookie sheets with parchment paper. Sift together flour, baking powder, and salt into a medium bowl; set aside. Mix eggs on medium speed until eggs are fluffy, about 3 minutes, and gradually beat in the sugar until blended.
Mix in the extract and reduce the speed to low and mix in flour mixture. Drop heaping tablespoons of the cookie mix on to baking sheets, spaced 1/2 inch apart. Bake cookies, rotating sheets halfway through, about 8 to 9 minutes. The tops will appear cracked and cookies should be pale. Allow to cool.
