Grate rind of the orange into food processor, Combine rind, flesh, and juice with butter and egg (until blended). Sift remaining ingredients (except fruit) and mix into the ingredients from the processor. Drain fruit, (reserve some for decoration) chop fruit and fold into batter.
Pour into muffin tins and top with fruit juice from reserve. Bake in hot oven at 200 degrees C (400 degrees F) for 15-20 minutes. Cool and serve.

Lorraine, for some weeks now I have been book-marking favourite recipes, and I noticed that the majority were submitted by you. Is it because we are both Australian and have similar tastes? Just want to let you know that I thoroughly enjoy all of yours.
For the fruit muffins, please indicate what amount is considered a small can of peaches. In Canada that is quite a lot of fruit. Thanks for the help. Laurie of Ontario
