I love this Oriental style dish. You can use green peppers only, if you wish, but I like to use one green and one red. Red peppers are sweeter than green.
Ingredients:
- 1 1/2 lbs. round steak cut in thin strips
- 2 Tbsp. oil
- 1 cup sliced onions
- 1 clove garlic
- 1 cup uncooked rice
- 1 can beef broth
- 1 can water
- 3 Tbsp. soy sauce
- 2 green peppers, chopped (or other colored peppers)
- 1 jar pimento, drained
Directions:
Brown beef in oil; stir in onion, rice, broth, water, and soy sauce. Bring to a boil. Reduce heat; cover and cook until liquid is absorbed, about 25 minutes. Stir in pepper and pimento and heat through.
