My granddaughters helped make this, you can choose more veggies to add if you wish.
Preheat oven to 400 degrees F.
Into 12 cup casserole add broth, rice, meat, onion, soy sauce, and stir fry sauce. Dump in all vegetables except the coleslaw mix. Stir well. Add the coleslaw to the top; gently stir. Pop into oven for 45 minutes. Vegetables should stay somewhat crunchy.
Could serve on a bed of raw spinach.

When I read your post, I just knew you had to be from MN. It is the only place I know of that calls a "casserole" a "hot dish"! LOL. Sounds good at any rate.

We make a lot of stir fry and thought this was an easier way to accomplish it to take to pot lucks, etc. I had sent the recipe to a local regional newspaper, and thus been asked to submit it to an area fundraiser for a Shelter House, a safe house for abused women. I will also be making this for a Tasting Fundraiser after Thanksgiving.
