Is it safe to use fat-free cream cheese and fat-free sour cream when baking?

I bake with nothing else. I always use fat free sour cream and fat free cream cheese. Everything always seems the same as when I used to use full fat items.
I've baked New York Style Cheese Cakes and have used the non-fat cream cheese and sour cream.
I do also. You would never know the difference. I have used ff sour cream in a chicken recipe, though, and it turned out runny.
