Marinated tofu makes this salad very delicious. It goes well with the chicken and could even be used instead of chicken for a vegetarian salad.
Mix together chicken, celery, and onion. Marinate tofu in soy sauce and lemon juice for 1 hour. Add to chicken mixture. Mix remaining ingredients to make dressing. Stir together lightly and serve. Makes 4 servings.
