Slice cucumbers into 1/2 inch slices. Cut each slice into 4 chunks. Place in a serving bowl. Blend all remaining ingredients in a blender or shake vigorously in a jar with a tight fitting lid. Pour dressing mixture over cucumber chunks. Cover and refrigerate overnight. Keep well chilled while transporting to picnic site. Note: If you don't want the seeds in your salad, simply cut the cucumber in half and run a spoon down the center.
