Place mixed fruit, sugar, butter, and pineapple (with juice) into saucepan. Bring to boil and simmer for 5 minutes. Allow to cool. Lightly beat eggs and stir into cooled mixture. Sift together the flours, mixed spice, and soda and fold into mixture. Bake in a round or square 7-8 inch tin in a moderate oven for 2 3/4 hours. Test after about 2 hours as time may vary depending on your oven. Remove from oven when cooked, and let cool before removing from tin, unless you have lined it with baking paper. No need for topping as it's great without.

This sounds delicious! Can you give an idea of what spices would be in the "mixed spice"? And also what would be considered a 'moderate oven'? Even if it's celcius, we can convert it. Thanks!
Editor's Note: A moderate oven is usually considered to be 350 degrees F or 180 degrees C. We have added that to the directions above.
I also want to know what moderate oven temp is. What do you mean by 16oz mixed fruit (canned, dried or fresh fruit)? Thank you, Cheryl
