A great way to use up that last bit of leftover turkey and leftover mashed potatoes.
Combine potatoes, turkey, and onions. Stir in egg, mayo, mustard, salt, Worcestershire, and pepper to taste. Shape into four 1/2 inch thick patties. In nonstick skillet melt butter over med. heat. Cook patties for about 10 mins. or until browned, turning carefully with spatula half-way through.

I'm raised italian, and potato patties from leftover mashed are part of my upbringing and my comfort food. Even without the turkey, which sounds great, I mix the leftover mashed with same ingreds, but plus breadcrumbs and especially parmesan or romano cheese.
Oh my goodness sounds so good! Will be doing this even with leftover chicken and mbilar1's idea of adding parm! Thumbs up :-)

Editor's Note: This recipe has been edited to add the egg with mayo, mustard etc. The lightly beaten egg helps the patties stick together. Thanks for noticing it missing in the directions.
