In a large saucepan, combine the sugar, water, cinnamon candies, food coloring and flavoring. Heat this until the candies are dissolved. Add the apple slices and cook until tender, but not mushy. Set this off the stove and let it stand until the apples are a lovely shade of red, then drain off the liquid and let the apples cool. Line the bottom and sides of the pie crust with the apple slices, cover with ice cream and place in the freezer for several hours. Using the egg whites and 6 Tbsp. of sugar, make a meringue to swirl over the top of the ice cream and brown it lightly in a 500 degree F oven shortly before you are ready to serve. Watch closely while browning, as it does not take long!

This sounds great, Robin... I can't wait to try this one! Couple of tips... if you get the ice cream as cold as possible in the freezer (use a deep freezer if you have one), and completely cover and seal the top of the ice cream/pie with meringue it will keep the ice cream insulated and cold while the top browns.
