Ingredients

  • 2 dozen vanilla wafers
  • 2 package cream cheese (8 oz. size)
  • 3/4 cup sugar
  • 1 Tbsp. lemon juice
  • 1 tsp. vanilla
  • 2 eggs, well beaten

Directions

Line muffin tins with cupcake papers. Place a vanilla safer in each cup. Beat ingredients until light and fluffy. Spoon into cups. Bake at 375 degrees F for 15 minutes. Cool. Put on topping and chill. You can use any jam or cherry pie filling for topping.

My family loves this cheesecake. I use the same ingredients except use the Splenda for baking instead of the sugar. I also top with sugar free jam.

I recently made these again only didnt have the vanilla wafers so I used Ritz crackers and I liked them even better.
