In a 10 inch or larger skillet (no fat added), cook sausage until browned and drain excess fat. Add onions, potatoes, pepper, and thyme and cook over medium heat stirring occasionally until potatoes are browned (10-12 minutes). Reduce heat to medium low and cover the skillet; cook until potatoes are tender (5-10 minutes). Stir in parsley or basil, and continue cooking uncovered until the vegetables are crisply tender.
