Parmesan and Garlic Pita Bread Croutons

I had some pita bread that was going stale and the edges were beginning to mold because I had forgotten to put them in the freezer on time :-( The thought of simply throwing them away was driving me crazy! What to do to rescue them? Pita croutons! The amount of ingredients will depend on how many croutons you'll be making.

Ingredients:

  • extra virgin olive oil to coat
  • fresh grated Parmesan cheese, to taste
  • garlic salt or powder, to taste

Directions:

Preheat oven to 350 degrees F.

Cut pita bread into strips and then cut the center strips into squares. Cut the two rounded remaining strips in half to have an added bonus of pita crisps for hummus dipping.

Toss pita pieces in a bowl with enough olive oil to coat. Sprinkle generously with Parmesan and toss to coat again.

Place pita pieces evenly on a cookie sheet in a single layer and sprinkle with garlic salt and bake until crispy toasted, about 8 to 15 minutes depending on the thickness of your pita pieces, turning once.

Allow to cool and store in an airtight container for up to three days or store in the freezer.
