Mix crackers and brown sugar. Add peanut butter to the melted butter while still hot. When peanut butter is melted, add mixture to crackers. Place in pan, pressing crumbs to sides and bottom. Reserve 1/4 cup crumbs for topping.
In a saucepan heat 5 1/2 cups milk. Mix eggs, sugar, cornstarch and 1/2 cup milk. Stir into hot milk and boil over medium heat until thickened. Add vanilla and coconut. Pour slowly over crumbs and refrigerate. When cool, sprinkle remaining crumbs on top.
