Just so yummy!
Whisk eggs in a large bowl. Add flour and cream and continue whisking until smooth and combined. Stir in chopped ham, shallots, grated cheese and season mixture with pepper if desired. Divide mixture evenly into a greased 12 x 1/3 cup capacity muffin pan (see note below).
Bake in a 180 degree C (350 degree F) preheated oven for 25 minutes or until frittatas are set and light golden. Stand frittatas in pan for about 2 minutes then remove. Serve as a snack or accompany with salad for a light meal.
Note: Silicone muffin trays are ideal for this recipe as they allow frittatas to be easily removed without sticking. Enjoy!
