Having spent many years watching my mom bake cookies I've come upon a near perfect way to do so: Make your cookie dough any way you like, but be creative. Throw in chocolate chips, nuts, cereal, even shredded coconuts. Then put very stiff mix onto a cookie sheet and put down wax paper. Add dough and then put a layer of wax paper on top. With a rolling pin, roll out cookie dough and wax paper till about 3/4 inch thick.
Place in fridge for about 2 hours or until cold and stiff. Then pull out everything and take off top layer of wax paper. Using your round pizza cutter, cut out strips horizontal and vertical into squares. Place squares on cookie sheet and bake at 350 degrees F for 11-12 minutes.
These are of course best eaten freshly out of the oven with a glass of milk, but can be added to ice cream in a sandwich. Enjoy
