Make your mashed potatoes however you normally do, let cool about 10 minutes. Stir in Genoa and mozzarella cubes. Pour into greased, bread crumb dusted dish. Bake at 350 degrees F for 15-20 minutes until cheese is melted. You can also put crumbs on top of the casserole.
