Is there a difference between Yukon and regular white potatoes? I baked a whole white potato and it seemed like it took forever to cook. I wasn't sure if I bought the wrong kind. Please advise.

Maybe it's just the yellow color, but I think Yukon's taste much better & are fluffier.
Here are a few links regarding differences:

I agree with Cyinda - the Yukon Golds are a tiny bit pricier but there is a big, big difference in the taste; mashed, they seem much creamier; around our house, they like it when I just cut them into wedges, toss with a little olive oil and garlic powder, and make oven-baked fries out of them ( 425 for 30 minutes).
Doing them that way, they're much cheaper than packaged, frozen fries - no salt and better for ya!
