Thank you for posting this. I love ginger in all it's forms. I haven't seen ginger candy, though. Where do you get it? It sounds wonderful, and easy to keep in the car for those who get car sick. Now I have to look for a recipe! Crystallized ginger is very good, so I know candy would be just great. I voted for your post.
I have a child that's allergic to artificial fragrances. Using fresh ginger sounds like a nice alternative. Thanks for the suggestion.
For anyone still wondering where to get ginger candy, my search revealed it's available at most vitamin stores, markets like Trader Joe's and Whole Foods, and from Amazon.com.
