I would like to find a recipe for Escalloped Apples. Does anyone have one, or know where I may find one? I have a good looking recipe from Pampered Chef for an Escalloped Apple Pie, and need to make the Escalloped Apples, for I can't find them anywhere but the Schwann Co. and they are too expensive for me.

Hi there! Apparently many recipes suggest you buy Stouffer's frozen "Harvest Apples", but I can't discern whether they are still made. In searching for a recipe for you, I bumped into this post (2 recipes) at Epicurious.com:

French Toast Muffins
Preparation time: 10 min., Cooking time: 10 min.
3/4 lb. frozen escalloped apples
3 eggs
1/2 cup milk
2 Tbs. sugar
1/2 tsp. Frontier Vanilla Extract
Prepare escalloped apples according to package directions. Combine next 5 ingredients in a shallow dish. Season with salt to taste and mix until well blended. Place 4 muffin halves, cut-side down, into egg mixture and let stand 1 minute. Turn to coat remaining side. Melt a portion of the butter in a heavy nonstick skillet over medium high heat. Working in batches, place muffin halves in skillet, cut-side down. Cook 8 minutes, turning once, or until browned. Repeat with remaining muffin halves and butter. Serve with apples.
