This corn bread is perfect with bean soups. It is amazingly fragrant, and soooo delicious! It is a northern bread, so it's tender and slightly sweet.
Heat oven to 425 degrees F. Use an 8 inch pie pan or, if you have it, an 8 inch oven proof skillet. While you mix the other ingredients, put the bacon fat in your pie pan and put it in the oven to melt.
Combine the dry ingredients, mixing well. Take your hot bacon fat out of the oven, and stir it into the milk to cool it. Add this mixture and the egg to the combined dry ingredients, and stir just until well combined. Pour into the hot pie pan or skillet (this helps make a crispy crust). Bake until just done in the center, 20 - 25 minutes. Enjoy!
