Spinach Squares

Ingredients:

  • 1/2 cup butter
  • 3 eggs
  • 1 cup milk
  • 1 cup flour
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 1 lb. Monterey Jack cheese (grated)
  • 4 cups fresh spinach (chopped)

Directions:

Melt butter in 9x13 inch pan while heating oven to 350 degrees F. In mixing bowl, beat eggs; beat in milk and dry ingredients. Stir in cheese and spinach. Spread in pan and bake 35 minutes.

Cool about 20 minutes, then cut into 1 1/2 inch squares to use as appetizer or 4 inch squares for luncheon dish. Serve at room temperature.

Not fond of spinach, but this recipe is the exception to that rule for me.
