Eat soup one night a week.
By Denise Editor's Note: Soup is an inexpensive meal, especially if you make it from scratch. Why just one night a week? Soup is great! Make large batches and freeze extra for future meals.

When I freeze soup or chili, I pour it into gallon ziplock bags. Lay the bag on its side, and let as much air as possible out, then seal the ziplock. Lay the bags on a cookie sheet to freeze; then slide them into a plastic grocery bag and set along the wall of your freezer. This will help to avoid poking holes in the bags. When you are ready to use a bag, just lay it in the sink and let it thaw. Or if you are in a hurry, cover it with warm water so that it thaws more quickly. Open bag and pour into soup kettle to heat. I make soup and chili in large batches...about 5 gallons. You could also freeze in Quart size bags for smaller meals. Because you push most of the air out, there is no freezer burn, and it will keep in the freezer for a year.
instead of using zip locks invest in a vacuum sealer these are cheaper now than ever and you can put your frozen soup in the bag, freeze, place frozen bag in boiling water while you change from work, do homework, or laundry, come back 15 min later and dinner's on.
