Place bread in blender container. Process to fine crumbs. Add to ground beef in bowl; mix well. Place celery, onion, egg, water, salt, and pepper in blender container. Puree. Add to meat mixture; mix well.
Press meat onto waxed paper to form 8x12 inch rectangle. Top with dried beef, mushrooms and cheese. Roll up as for jelly roll using waxed paper as a guide. Place in microwave-safe baking dish.
Pour 1/2 spaghetti sauce over meat roll. Tent with waxed paper. Microwave at full power for 8-8 1/2 minutes. Rotate 1/2 turn. Microwave for 8-8 1/2 minutes longer. Let stand for 10 minutes before serving.
Heat remaining spaghetti sauce in a pan. Serve with meat loaf.
